No, I am not a trained baker but I do find so much joy taking a theme and creating a cake to go with it. I hope one day my sons will look back at the birthday cake tradition I have started for them and appreciate the special cakes I created.

With Easter around the corner I wanted to try my hand again at making Bunny Pancakes. They were a huge hit in our house last year, despite looking a little odd (see picture at the end). I tried a few tweaks and I think they turned out much cuter this time.

You Will Need:

2 medium sized round pancakes
2 mini round pancakes
Blueberries
Strawberries
Marshmallows

I found that it was easiest to make round pancakes when I poured the batter onto one point and kept pouring on that one point until I got the size I desired. This seemed to help the batter spread out in an even circle.

I used the tip of a strawberry for the nose. For the bow tie, I cut the bottom half off a strawberry then sliced it in half. The ears were made by cutting a round pancake in half.

These are sure to be a hit. But remember, everyone burns their first pancake, so just keep flipping. Check out what my bunnycakes looked like last year! Haha!

Well, it’s almost St. Patrick’s Day and I wanted to come up with a treat for my boys that would actually be healthy. I decided to try making a rainbow fruit tray and I have to admit, I really like how it turned out. The best part was that my boys ate almost all of it. Yep, that’s right, my boys ate almost an entire plate of fruit.

Fruits:

Here are the fruits I used plus some other options depending on what’s in season or available at your store.

Red: strawberries or raspberries
Orange: mini orange tomatos, cuties or cantaloupe
Yellow: pineapple, mango
Green: grapes, honeydew, kiwi
Blue: blueberries
Purple: grapes, pomegranate seeds
White Clouds: ok, this isn’t fruit but marshmallows, or a fruit dip are super cute (and yes, my boys went for the clouds first).

My boys actually loved this! I’ve never seen them eat this much fruit.

Here is evidence that they liked it. I guess you can say that they weren’t fans of the tomatoes though.

I love this idea for a St. Patrick’s Day treat but it would also work really well for a birthday party, shower or other gathering. If you want a more sanitary option for large groups, try making them with skewers to create individual snacks.

I decided I wanted relive those lovely girly afternoons by making some heart thumbprint cookies like we did back then. I whipped up a batch one afternoon while my toddler was sleeping and I have to say, I haven’t lost my touch. They turned out adorable and the plate was cleared by the evening thanks to my boys.

Ingredients:

1 1/2 cups butter softened
1 cup powdered sugar
1/4 teaspoon salt
2 eggs
1 tsp vanilla extract
3 cups cake flour
raspberry jam

*Preheat oven to 350°

1. Beat butter, sugar and salt in a mixer until smooth

2. Add the eggs one at a time and beat until combined

3. Add the vanilla extract

4. Add in the flour and mix until just combined

5. Roll the dough into 1″ diameter balls and place on a baking sheet lined with parchment paper

6. Create a heart shaped indentation by pressing your pinky finger 2x to make a “v” (to keep the dough from sticking, I dipped my finger into water before creating the indent.

7. Add jam to fill the heart shaped indent (I used raspberry jam and mixed it with a spoon to smooth the lumps).

8. Bake cookies at 350° for about 10-12 minutes until the bottoms are lightly browned.

Serve the cookies with your best Earl Grey tea or in my case, let your children gobble them up in three bites.

This construction themed cake was so much easier than I expected. The cake was made from a store bought cake mix, 2 round cake pans, store bought chocolate frosting, and Oreo cookies.

I added these cute trucks to the cake which, once cleaned, became a new set of toys for my son.

Cake 2 round chocolate cakes and add chocolate frosting.

Remove white frosting from Oreos, add to a Ziplock bag and smash with a rolling pin.

Trace a number on the top of the cake and sprinkle the cookie crumbs around the number and side.

I moved the cake to a wooden board and added construction trucks, placing the bulldozer in the front of the number so it looks like this truck carved the number.

We finished off the party with these cute table decorations and plates.

They were a hit and have since become one of my favorite cookies to make around the holidays. The spice of the gingerbread with the citrus of the orange is the perfect combo.

What you Will Need:

1 1/2 sticks Salted Butter, softened

1 2/3 c Sugar

1 Zest from 1 Orange

4 c All-Purpose Flour

1 1/2 tsp Baking Powder

1/2 tsp Baking Soda

1 1/2 tbsp Ground Ginger

1/2 tsp Ground Nutmeg

1/2 tsp Ground Allspice

2 tbsp Ground Cinnamon

1/4 tsp Ground Cloves

1/2 tsp Salt

2 Eggs

1/2 c Dark Molasses

1/4 c Orange Juice

For the Icing:

2 c Powdered Sugar

4 tbsp Orange Juice

First, in an electric mixer, cream the butter, sugar and orange zest in a mixer until smooth.

in a separate bowl, mix the dry ingredient (flour, baking powder, baking soda, ginger, nutmeg, cinnamon, allspice, cinnamon, cloves and salt). In another bowl , mix eggs, molasses and orange juice. Add the dry ingredients to the butter mix and add the egg mixture. Mix until it holds together.

Divide the dough into two balls and wrap in plastic wrap or waxed paper. Set the dough balls in the refrigerator for 15 minutes to cool.

Preheat the over to 350° and cover the counter with flower. Roll out the dough with a rolling pin to about 1/4″. Use cookie cutters to create cookies and place them on a baking sheet lined with parchment paper.

Bake the cookies for 10-12 minutes. I like mine a bit crispier so I cook them a bit longer but if you prefer softer cookies, take them out when they are just browned. Place them on a baking rack and allow them to cool thoroughly before frosting with icing.

For the icing, mix powdered sugar with orange juice. I usually start with one tablespoon at a time until I get a consistency that is thick but and not too runny. You can then add to a piping bag or a ziplock bag with the tip of a corner cut off.

If you are planning a holiday party, or any gathering, this is the perfect appetizer to make.

What you will Need:

1 pack of crescent rolls
1 8 oz. wheel of brie cut into cubes (I used about 3/4 of it)
Fig Jam or Cranberry Sauce
Bacon chopped small (I used about 3 strips)
1 egg
Fresh Rosemary (for garnish)

Note: For a larger wreath you can use more crescent rolls.

Step 1:

Preheat the oven to 375° and cover a baking sheet in parchment paper

Step 2:

Arrange the crescent roll triangles into a circle overlapping the flat bottoms slightly.

Step 3:

Spread the jam on the crescent roll along the circle.

Step 4:

Cover the jam with the cubes of brie (I did not use the full 8 oz).

Step 5:

Sprinkle the bacon over the brie.

Step 6:

Fold the crescent rolls into the center and press to secure.

Step 7:

Coat the top of the crescent rolls with the egg and bake at 375° for about 12-13 minutes until the dough has become brown.

Step 8:

I transferred my wreath to a wooden board and garnished with freshly chopped rosemary and rosemary sprigs.
