It’s hard to call these frozen s’mores baking because this recipe is just so darn easy. They are so simple to make but there’s nothing basic about the taste or nostalgia. As a busy mom, this is the ideal dessert for me.
I have been serving these frozen s’mores for years. We started making them for my oldest son’s lumberjack themed first birthday. We used them again for a camping themed birthday and I recently made them for a summer BBQ we hosted.
We had some friends over for a BBQ and outdoor movie. I really liked the idea of making s’mores because it is summer and there’s nothing like roasting them on a warm July night. With lots of young kids running around though, I didn’t feel comfortable lighting up our backyard fire pit so I did the next best thing…whipped up some frozen s’mores.
What you will need (makes 24)
- 3 packets of Graham Crackers
- 2 7 oz. Containers of Marshmallow Creme
- 1 (12 oz) Pack of Chocolate Chips (we used semi-sweet but you can use milk or dark chocolate)
- Parchment Paper
Step 1:
Gently divide 24 graham crackers in half.
Step 2:
Spread 1-2 tbsp marshmallow creme to one half of the graham cracker. Top with second graham cracker.
I try to keep the marshmallow from spilling over the edges. This will help later when adding the melted chocolate.
Step 3:
Place crackers on a cookie sheet lined with parchment paper and freeze for 2-3 hours.
Step 4:
Create a double broiler by filling a pot with water about 1/3 of the way and adding another pot or bowl on top. Heat water to a boil then simmer. Add chocolate chips and stir until melted.
Step 5:
Dip the frozen graham cracker into the melted chocolate and coat it about half way.
Step 6:
Return s’mores to parchment paper and freeze for at least 2 hours.
Serve them on a tray straight out of the freezer.
